Ham & Bean Soup



Ham & Bean Soup

1 Ham bone with meat cut off and diced
1-2 small bags of small navy beans
vinegar (if desired)

Wash the beans in a colander and pick out the bad ones if there are any.  Place them in a  6 quart covered pot, cover them with water (about 1 inch above the beans).  Bring the beans to a boil then turn off burner and let them sit for 1 hour.  Don't pour off the liquid. Add the diced ham and bone and cook on  medium to medium-low heat until it's done.  I like my beans to break open  so I cook them for probably 2 more hours.  If you have too much liquid remove the lid and let it cook down.  If it's too dry add more water.  You can also read the directions that come with the beans to see if it's different.
