German Potato Salad



Grandma (Lou) Knapp's German Potato Salad

5lbs potatoes
3/4 cup sugar
3/4 cup water
3/4 cup vinegar
1 tbsp flour
1/2 lb bacon, cut in small pieces, browned & drained
1 chopped white onion
fresh parsley

Boil the potatoes with jackets on.  Remove, cool and slice thin.  In a sauce pan, whisk together the sugar, water, vinegar and flour, then cook on low until slightly thickened. Add chopped onion and cook 2-3 minutes.  Place sliced potatoes in a serving dish, pour sauce over potatoes, top with bacon pieces and parsley to garnish.  Serve warm.
