Kolaches with Prune and Apricot Filling



Kolaches

1 cup milk, scalded
1/2 cup milk
1 tsp salt
1 stick oleo, melted
1 pkg yeast in 1/4 cup warm water
2 egg yolks & 1 whole egg
4 cups flour or more

Put milk, sugar, salt, oleo, yeast and eggs in a bowl and beat.  Add flour and beat more.  Let rise until double.  Punch down.  Let rise again.  Shape into balls, let rise and fill.  Let them rise a few more minutes and bake. 




Prune Filling

2lbs dried prunes
1 1/2 cup white sugar
pinch of salt
1/4 tsp allspice
1/4 tsp cinnamon
1 tsp lemon juice or vinegar

Soak & cook dried prunes well.  Cool, pit and chop finely.  Use some prune juice to thin filling if you wish.  Add sugar, spices, lemon juice.  Mix well together.  Make filling for about 4 dozen kolaches.



Apricot Filling

In saucepan combine 2 cups coarsely snipped dried apricots & water to cover 1 inch above apricots.  Simmer, covered, for 10 minutes, drain.  Stir in 1/3 cup sugar, 1tbsp margarine.  Cool.
